The Pinot Bianco “Vial” from the Cantina di Caldaro is a white wine with a stern and extremely mineral character. It perfectly embodies the soul of the Alto Adige territory, which sees in its rigor and its wonderful Dolomites the main traits that mark a landscape of pure charm. Elegance and finesse are the protagonists in the sip of this Pinot Bianco that combines the typical subtlety of the grape variety with the minerality coming from the local hills and from Lake Caldaro. The Cantina di Caldaro is indeed located in this area, thus benefiting from the consequent beneficial influences that the lake water can provide.
The “Vial” is a pure Pinot Bianco, coming from hillside vineyards with an East exposure and situated at an altitude of about 500-550 meters above sea level. The vines, which are between 10 and 13 years old, thrive on porphyritic-clay limestone soils, subject to strong temperature excursions between day and night that allow for the production of fine grapes with a well-endowed aromatic profile. Following the harvest and the gentle pressing of the bunches, the must undergoes a period of slow cold decantation that precedes alcoholic fermentation.cold that precedes alcoholic fermentation. The maturation, in the presence of fine lees, takes place mostly inside steel containers, while the remaining 10% ages in large barrels; after 5 months, the wine is filtered and bottled.
Cantina di Caldaro “Vial” pours into the glass with a bright straw yellow color. The aroma is predominantly composed of fresh fruity notes, such as apple and pear, with hints of dried fruit and a strongly mineral background. On the palate, there is a strong correspondence with what is perceived on the nose: the fresh and savory vein enlivens the fruit and makes it crunchy. A long mineral persistence makes it extremely drinkable and fine.
